SPECIFICS

  • Fermenting and Curing Rooms:
    40,000 sf
  • Kitchen: 30,000 sf
  • Support Areas: 20,000 sf
  • Underground sanitary and process waste lines
  • Support mezzanines
  • Under-slab heating
  • Insulated Metal Panel walls and ceilings
  • High-speed-traffic doors with robotic controls and interlocks
  • Required complex upgrades to existing central plant to allow for adequate flow and pressure to low- and high-temperature glycol systems

This award-winning project included laser-guided robots for salami kitchen automation, as well as magnetic-driven robots for the salami curing and washing operations. The robotics required complex floor sloping solutions to create levelness while maintaining proper sanitation design. Slab steel reinforcements were installed in conjunction with robot travel paths to prevent any magnetic field distortion. In addition, imported air handling equipment was controlled by three temperatures of glycol that offered an optimum fermenting and aging environment for the salami. Finally, a new dedicated electrical service and transformer, and extensive low-voltage cabling support the fully automated systems. Finishing this premier project was, in part, accomplished by coordinating with seven Italian equipment vendors.
